RECIPE: PINEAPPLE CASSEROLE

PINEAPPLE CASSEROLE

1 cup sugar
6 TBSP flour
2 cups grated cheese
2 (20oz) pineapple chunks
1 cup Ritz Cracker crumbs
8 TBSP (1 stick) butter
6 TBSP Pineapple Juice

Pre-Heat oven to 350

Drain 2 (20oz cans) pineapple chunks and place in an 8 x 8 baking dish.
Save and set aside the pineapple juice.
Mix 1 cup sugar and 6 TBSP flour together and sprinkle evenly over top of pineapple
Then take the 2 cups grated cheese and sprinkle on top of the previous layer
Place 1 cup Ritz Cracker crumbs on top.... I place 1 sleeve of Ritz crackers in a baggy and hit with or smash with hand....
Then 8 TBSP butter melted and drizzled over the cracker crumbs
Then 6 TBSP Pineapple juice drizzled over the cracker crumbs...
Bake at 350 for 25-30 minutes

variations: some people mix together the flour, sugar, pineapple and cheese and place in dish and then add the crackers crumbs....

  1. THIS IS ANOTHER WAY IN WHICH TO PUT THE PINEAPPLE RECIPE TOGETHER. (I will try both ways)

In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.

In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.
